I'm not in Canada, but I am and will be watching hockey all day. That and getting the yard hurricane-ready. Oh yeah, and eating a shit-ton of homemade tamales. Enjoy your day outdoors, sounds lovely!

I fucking love tamales. Best: Curra's Grill, Austin, Texas - especially after a big Saturday night.

Got any good recipes or secret tips?

Before I make tamales though, and before I die, I need to learn how the taco trucks always make the best chicken tacos. I almost learned the secret in Oakland.

I keep waiting for someone to make /s/Recipes.

I'm the sous-chef in the house so I'm not the best person to ask. We do southern-ize our tamales and use pulled pork that we smoke for the meat. We get a ton of meals out of all that (the pulled pork, then the tamales). We keep the tamales really simple: masa, pork, pepper sauce and steam in a husk. We serve with more pepper sauce, a little queso, salsa, and sour cream.

Our food trucks leave a lot to be desired...I did see one that specialized in British food down by the boat ramp a couple weeks back and it left me wondering who would eat that fare and why there.
