The actual roasting process does not smell good, and can even generate a lot of smoke if you go dark roast. Then you let the beans degass a day or so in a glass jar and they smell amazing.

There's also a bit of 'husk' that comes off during the process, so I do mine at the edge of the sink. Generally lighter roasts, so not too much smoke.

Light roasts are best imho .

I got reminded today there used to be a sweet shop in my neighborhood that would take roasted beans and cover them in a thick coat of dark chocolate. It was deliscious
