I've seen a lot of power line electrocution videos, but I've never seen anyone start to smoke, catch fire and drop to the ground quite that fast. At the end, I cant tell if he loses a shoe or a limb.

For some reason this is tagged as Vehicle but I think it'd more aptly be labeled as a Suicide.

Why was he electrocuted? Don't those wires have coating? Can something like a phone / laptop charger / something we encounter on a daily do this?

I imagine when the cables were installed that car port wasn't there, and it would have been very hard for someone to touch them. Thus, it was assumed no one could, let alone would, touch them.

As long as you keep your electronics in good condition, such as inspecting them for wear and tear and replacing when appropriate, along with not having a path to ground through your body if you ever did inappropriately touch something high voltage - hence why birds do not get electrocuted when they touch only one cable and why you saw flames at his feet - you have nothing to worry about.

Apologies if I'm missing something, but how would I ever not have a path to ground through my body? I'm not a bird.

You can get electrocuted just by going near those power lines. No need to touch them. Lots of people die from pissing on them from bridges too.
