Plant-based diets can be pretty healthy if one eats a variety, rather than just grains. Besides, for me it's just not worth it to cause so much death and suffering for the sake of going longer between meals, especially when plant-based alternatives exist.

Thing I don't get about vegans is being ok with eating a plant organism but not ok by eating a meat organism?

One is confirmed to think, while the other is not, and if plants somehow actually can think, eating animals takes about 10 times as many plants to feed the animals anyway, so being vegan still kills less plants :) .

So its ok to kill if doesn't think? Like a nazi killing a jew because to them its sub human sort of thinking? Thats not ok.

That's a bit of a slippery slope there. Even if killing even bacteria isn't okay, my point is that killing less is still better than killing more, especially when one doesn't have an option. Also, with many plants it is possible to eat part of them without killing the whole plant.
