Lentil soup. So easy and so many variations.

Put dried red lentils into pan. Add chopped onion and garlic. Add water. Add stock cube (vegetable, chicken or ham). Add choice of herbs and spices (chicken cube with some turmeric, cumin and black pepper is my favourite combintion at the moment). Heat until boiling. Cover and simmer until cooked.

Takes about 5 minutes to prepare and 20 minutes to cook. If it's too hot to eat soup then let it reduce down and then cool it and you have a nice lentil paste you can have with nibbles.

My lazy soup is champignon soup. Put finely chopped potatoes and few macaroni into the pot with water and put it on fire, during that fry 2-3 minutes a bunch of champignons with tomato pasta or tomatoes or carrots (add any kind of spices you like). Then put fried stuff into the soup and grate cheeze right before turning fire off. Takes 5-10 minutes to make, no effort needed, very cheap and decently nutritious.

Sheepishly my lazy meal is canned soup in the microwave...not very creative or as impressive as this! Ha
