I agree with this, and I think the mentality described by the OP might have been partially responsible for my slowness to acknowledge my sexual orientation... hmm. I hadn't really thought about that before.

"But gen Z labels everything"

No. Gen Z has a million labels for being transgender and pressures people to label their transgender identification, but often pressures people to NOT label their sexual orientation. Double standards. We end up seeing more discussion of labels on the whole because the "LGBTQ+" movement talks about transgender-related topics way more than LGB-related topics.

edit: grammar

Interesting insight. And this is consistent with what I'm seeing in online dating. Every woman appears to be listing her pronouns in their bios (many with some kind of non-binary identification and stereotypical style to go with it), but most women not listing their sexual orientation. Almost no one is listing lesbian or bisexual. Some list the ambiguous "queer" and fewer than that list "pansexual." And the pansexuals I seem to come across IRL appear to be lesbian women dating a trans man (or sometimes a non-binary woman) and therefore they can't call themselves lesbians because that would reveal that they're only attracted to the female sex, which is what their dating history shows (and most gay women don't like to call ourselves "lesbians" anyway though we will talk about "lesbian culture"). Or woke spicy straight women engaging in identity tourism who in some cases may try a short fling with a woman for street cred.

Sorry I'm responding to this so late-- Yes it's a fascinating insight. I actually first saw someone else on this sub point it out, so I can't take credit for it. :)

Yup, exactly. That sort of thing. That's really fascinating to hear that it even reflects on dating profiles.

Yup that's been my experience as well. (Kind of glad I'm not alone in that, lol.)

I encountered a woman like this somewhat recently... kind of amazing to actually witness in real life. She fully believed that she was "choosing the lesbian life," whatever that means. But she got bored of it after a few months, and started calling herself straight again. She is diagnosed with a couple forms of mental illness. It was just surreal to hear that perspective echoed by someone I've actually met, when I usually only hear that type of belief on certain internet forums.
