I'm surprised that St. John's Wort wasn't up there as an anti-depressant. It messes with birth control and you can't take it with MAOI inhibitors though.

Ashwagandha lowers blood pressure and helps with regulation of blood sugar, so you have to be incredibly careful if you take it with medication involving either of those.

Valerian root I would have listed more as an anxiolytic/sleeping herb than anti-depressant. It does make for some great sleep though, especially if you steep 1/2 tbsp the whole bits of herb with 1/2 to 1tsp each German chamomile, lemon balm/Melissa, and orange peel granules for about 10-15 minutes, covered.

Any herbs should come from heavily monitored and reputable sources, especially in the US since the FDA doesn't really have the same quality control over supplements and you can just have overpriced sawdust capsules.

Is there a good ultimate resource on this that you'd recommend?

Want to find a good book or something that also covers animal use and what you can grow yourself. As an example, for rabbits you could grow and treat with comfrey, dandelion, and chamomile.

Honestly, any time I want information on herbs I look up clinical studies done on them, traditional uses, and then go through and look for personal experiences with them.
