That's quite a fat cap! You'd probably have to leave them on their sides for as long as they were on their tops and bottoms to get them rendered properly. I'd probably score them every inch to prevent curling.

I don't like eating the fat on the steak directly, I trim it away after cooking render those scraps down into a little tallow for another use.
