For all the miserable guys here, having a set steak night once a week where you spend the money and make time to cook or go sit down in a restaurant does wonders for mental health. When I work away I make sure to do this.

It was rather nice to have steak again, this was our first since Covid. I hadn't been getting them since the prices have been crazy, but really, this still costs less than going out for burgers, let alone a nice restaurant.

That's quite a fat cap! You'd probably have to leave them on their sides for as long as they were on their tops and bottoms to get them rendered properly. I'd probably score them every inch to prevent curling.

I don't like eating the fat on the steak directly, I trim it away after cooking render those scraps down into a little tallow for another use.

I'm happy to see a cast iron there.

I like to use a reverse sear method myself. I've cooked alot of steaks alot of different ways and imo it's the best!
