It looks good man.

Supposedly we’re suppose to stay away from lunch meat, i roast chicken or grill chicken and slice it thin.

But that looks delicious. I like all that.

If you dry brine, leave out the salt in the rub though.

An easy marinade that I like is equal parts (like two tbsp) olive oil, apple cider vinegar, Dijon mustard, and soy sauce. You can add minced or ground garlic and some hot sauce.

I’m going to do this. I have guests this week, so no healthy cooking. I’ll post pics in a week or so. I have been looking for a way to spice up my lunch meat.

It’s been a lot of boiled eggs (I love them), chicken breasts, and meat.

Boiled eggs with soy sauce, sesame oil and hot sauce are awesome, I grew up eating that.

How long does this last before it goes bad?

Well, as long as any other fresh meat you cook. Not as long as the processed lunch meat that's filled with nitrates and preservatives, but it's a lot better for you.

Even nitrates are OK they aren't cooked over 130 centigrade.

So air dried and boiled ham is fine.

And if you add vitamin C (which counts as a preservative too) that also stops nitrates becoming toxic when cooked.
