It's what restaurants do. Why do you think their food tastes so good? One word: fats.

Bacon grease is a terrible choice because the high temperatures required to cook a steak will burn the bacon grease and make it taste like shit.

I have cooked steak in bacon grease. I thought it was good. It gives another dimension to the flavor. It did not burn.

Most people would be surprised at how much salt and butter are in restaurant food.
