Ingredients:
-2 blocks of preferred cheese (8 ounces/half pound each, used Wisconsin white cheddar and Gruyere)
-Pecorino Romano/Parmesan
-box noodle of choice
-half & half
Recipe:
Cook noodle according to box instructions, drain, and set aside in strainer. (wait until water boils, add salt to water when cooking noodles). As the noodles dry they may stick so make haste.
While the noodles cook cut half of each cheese block into small cubes- Whichever cheese is liked most, cut shavings off- to top the macaroni once it’s ready to bake
Add 2 cups half & half to a tall pan, stir in cheese cubes at low heat with a wooden spoon until melted -DO NOT GO AWAY- keep stirring. Lastly add half cup of Parmesan/Pecorino Romano.
Add noodles into that mixture
Butter deep square glass pyrex. Add the macaroni mixture evenly. Top with shavings and more Parmesan/Pecorino Romano.
Bake at 350 for 20-25 minutes
Broil for 5 minutes (this creates that crisp brown layer seen in the picture)
