Thanks man. I was gonna make the stew tonight but this worked out better for time. It was a comedy of errors. The sauce the meat is in was supposed to be the enchilada sauce, but I started making a roux cause those have been on the brain, but I had wanted to thicken it with tomato paste. So this one actually has two sauces. The second that's on top I just whipped up by shaking a mason jar with the ingredients.
