This was a more successful variation on the last dish: beef and peppers with rice.

There are periods I don't cook anything, but generally I don't buy a lot of processed food or eat out, so if I want to eat, I usually have to cook. Or ya know, ramen.
Your dishes are simple but delicious
Thanks. That's what I strive for, tasty and easy with few dishes to clean -- a lot of stuff can be done in a single vessel. Mise en place can go fuck itself, lol.
And I’m making cheeseburger soup this week because of you.
That's awesome, I should double-check I didn't fuck up one of the measurements. I hope you enjoy it.

You're getting close to dirty rice there.
I love my rice dirty.
I didn't bother with a roux to coat noodles since the rice would be absorbing most of the liquid.
Ground beef was seared in cast iron, seasoned with salt, pepper, garlic, onion. The pan is deglazed with a little water and everything added to a pot with half a cup of boiling beef broth, and three or four peppers split and deseeded, and 1/4c. of uncooked white rice. Covered, the pot needs to simmer for 15 minutes for the rice to cook and it's done.

Interesting, "On the trek into Everest base camp, dal bhat is basically the only meal served in the tea houses along the path. It is so closely tied to mountaineering that climbers often rate each day's trek by the number of servings needed to complete it, such as a "2 dal bhat" climb or a "4 dal bhat" for something really strenuous." https://www.oneingredientchef.com/dal-bhat/
