I use the core and rind of pineapple, a cup of brown sugar, an inch or so of ginger root, and a hot pepper. I keep it in a gallon sized ziplock bag and vent the co2 as necessary. In about two weeks you'll have a mildly alcoholic, tasty beverage from what you'd normally throw away.
