This wasn't too bad, seems like the more oil I use the less messy it gets. Just a thin layer and it'll splatter my whole stovetop, this I think just had a few sputters. Disposing of used cooking oil is a bitch though, you're supposed to dispose of it the same way you would motor oil. Not sure anyone actually does that though.

Never been in a dishwasher, never been roughly handled. This is beyond bad, and this used to be a quality US manufacture of pots. Now made in China.

/u/usehername asked why it mattered on the bottom, and there's several reasons. The first is that just shouldn't be happening at all, the outer clad layer of things is not supposed to just peel off. Functionally, it needs a stainless steel bottom to work on induction cookware. And finally, if it's that thin on the bottom, what's the inside like? One fleck out of the cooking surface and it might as well be an aluminum pot.

It's a pain in the ass. You need a super sharp knife, dip it in water just enough so a bead runs along the edge, and you need to clean and repeat after every cut. For the inside out rolls like I did, you're also supposed to cover it in cling wrap before you cut and also do all the other stuff.

Thanks man. I was gonna make the stew tonight but this worked out better for time. It was a comedy of errors. The sauce the meat is in was supposed to be the enchilada sauce, but I started making a roux cause those have been on the brain, but I had wanted to thicken it with tomato paste. So this one actually has two sauces. The second that's on top I just whipped up by shaking a mason jar with the ingredients.

The 'recipe':

  • pepper, american cheese, meat
  • pepper prep:
    • let it get black and flip it. don't let it go too long or it will literally disappear. if there is white ash forming on top of the black, burned skin, it's too long and the meat will be gone
    • then when it's all black, a little green is okay but you want the skin to be loose, put it in a plastic bag and twist it and leave it to steam until it cools. then take it out, cut off the head and cut it in half and remove the seeds and skin. skin should come off easily
  • take the meat, put a bunch of seasoning in it, mix it up, put it in a pan
    • i add browned onions to the meat
    • onions, garlic salt, red chili powder, cumin
  • don't coat the bun just place face down in hot oily pan
  • roast chiles on stove, cheese the burger, bun and done

I crumble the ground beef into the pan and give it a good salting, and I like to let it start to char, then I'll add diced onions and peppers, spices, and let the meat char some more. Really cook the shit out of it. I want a nice fond to develop. Then I'll deglaze the pan, preferably with sherry, and I add the meat & liquid to a roux. Sodium citrate and cheese make it cheesey.

I sometimes bother to break it up more but I didn't this time.

I didn't bother with a roux to coat noodles since the rice would be absorbing most of the liquid.

Ground beef was seared in cast iron, seasoned with salt, pepper, garlic, onion. The pan is deglazed with a little water and everything added to a pot with half a cup of boiling beef broth, and three or four peppers split and deseeded, and 1/4c. of uncooked white rice. Covered, the pot needs to simmer for 15 minutes for the rice to cook and it's done.

I think it was soy sauce, Worcestershire sauce, with onion and garlic powder.

Cacio e Pepe is delicious. It's interesting that the tomato wasn't introduced to Italy until the 16th century. The Italians basically reinvented their cuisine over it.

I learnt yesterday that originally Italians just put lard and a little cheese on pasta and all the different sauces are a relatively recent invention.

Looks like elevated Hamburger Helper. I'm sure it tastes better. I'm wary of those powder pouches with a gazillion ingredients in them. Just to clarify, it looks much better than Hamburger Helper and I'd eat your dish before that shit. Great job as always.

It was really simple, just 3 super mild serrano peppers, salt, ground beef, a little butter and flour to make a sauce to coat the noodles that you can't really see.

My water comes from a municipal supply, the water tests are surprisingly clean, although not perfect. I filter it, or use commercially filtered/ distilled water.

Iirc the municipal water supply is mostly from Lake Houston.

So do you have a sensitivity to iron?

My iron levels were dangerously high, it can cause chronic pain (why they were looking into it) and organ failure. It's not that there was a small amount of iron in me I didn't react well too.

I'm probably more susceptible to the problem since I cook a lot, pretty much all of my own meals, and my numero uno cookware was and still is my cast iron skillet. I am more careful about cooking and deglazing with acidic ingredients now. I had been under the impression that was not a problem to ever be concerned with.

Most people are chronically low on iron.

Women that menstruate tend to be low, and I've heard there is a problem in Africa, but considering my own experience I'd highly recommend people check their iron levels before supplementing iron.
